PAION takes its name from the dialectal appellation referring to the locality of Sabbioni where the winery is located and in whose vicinity is the Val d’Oca vineyard. It is made from Grappello Ruberti grapes harvested by hand exclusively from estate vineyards. PAION is an expression of our courageous adventure and constant quest for excellence in the classic method. The varied floral profile among which the freshness of gladiolus emerges, blends with hints of fresh red fruits such as strawberries, raspberries, berries and hints of spices such as black pepper and cloves. Notes of yeast and toast are reminiscent of the long aging process. PAION’s refined structure, fine perlage and exquisite minerality accompany you long after swallowing.
ORIGIN
The Grappello Ruberti grapes used to make PAION come from the “Val d’Oca” vineyard between San Matteo and Sabbioni, in the province of Mantua in Lombardy, in that tongue of land that, flanking the Oglio Nature Park, wedges into the Po River… The soil is characterized by the deep layer of alluvial sediments of a clayey nature that ensures its high water retention capacity and constant supply of nutrients. The presence of a delicate surface limestone vein requires the vine to make selective and delicate root uptake. The intermediate climate between oceanic and Mediterranean in conjunction with the most passionate care of the vineyard constitute key ingredients for a wine of balanced structure and exquisite minerality. Planting density: 4000 plants/ha.
To the eye
PAION stands out for its attractive and distinctive powder pink color. Clarity and transparency in the glass highlight the care in production and attention to every detail. PAION has a lively effervescence, with fine, persistent bubbles that rise elegantly in the glass giving a foretaste of an exhilarating taste experience.
Nose
Using red grapes such as Grappello Ruberti, PAION offers a varied floral profile reminiscent of gladiolus. It fades from hints of fresh red fruits such as strawberries, raspberries, cherries to berries such as blueberries, blackberries. PAION expresses light aromas of spices, such as black pepper or cloves. Notes of yeast and toast are reminiscent of the long aging process characteristic of this Rosé Metodo Classico.
On the palate
PAION’s fruit profile is characterized by flavors of strawberries, raspberries, cherries and other red fruits. Lively and balanced acidity make it very versatile, suitable both as an aperitif and in combination with various dishes. PAION presents very fine and persistent bubbles that create a pleasant effervescent sensation enriched by exquisite minerality that elegantly persists after swallowing.
